Ingredients
• 3 cups unbleached all-purpose flour
• 1/4 cup pure cane sugar
• 2 teaspoons baking powder
• 1 teaspoon kosher salt
• 1 cup plus 2 tablespoons shredded aged Irish cheddar (such as Kerrygold)
Instructions
1. Heat your oven to 350 degrees. Grease a 9X5 loaf pan.
2. In a medium bowl, combine the flour, sugar, baking powder, salt and 1 cup cheese.
3. Pour in the beer and melted better and stir well until combined.
4. Pour the batter into greased loaf pan and sprinkle the remaining 2 tablespoons of cheese on top.
5. Bake for 45 minutes or until a toothpick insert in the center comes out clean and the top is crisp and golden brown.
6. Let cool completely in the pan on a wire rack before removing from the pan.
7. Store in an airtight container for 4-5 days.
