Good for a dip, salad or side dish

Ingredients

• 1 can diced tomatoes drained
• 1 can black-eyes peas, rinsed and drained
• 1 can black beans rinsed and drained
• 2 cans corn drained or 1 & 1/2 cup of frozen corn

• 1/2 medium onion
• 1/2 cup diced green, red, orange or yellow bell pepper
• 1/2 tsp garlic salt
• 1 cup Italian dressing
• 3/4 cup chopped cilantro
Optional: add a chopped jalapeño if you like to spice it up.

Directions

• Mix beans, peas, tomatoes, corn, onion and bell peppers in a large bowl.
• Season with garlic salt.
• Add dressing and cilantro; toss to coat.
• Serve hot or refrigerated if desired.
